Awesome Book!

I purchased this book because I am a fan of Mayim Bialik, and was interested in learning about vegan cooking. There are a lot of really convenient and simple recipes in the book, as well as some more difficult ones. She acknowledges that a full commitment to vegan life-style isn't realistic for most people. In turn, she provides some evidence of how vegan eating can benefit you. She also gives some vegan recipes that dedicated carnivores would enjoy. I would recommend this book to anyone interested in becoming a vegan or just looking to add a few vegan meals to their diet.

Good cookbook, well written, and the recipes I've tried so far are delicious

I really like this cookbook. I was a little disappointed in it when it arrived, but I've taken the time to explore it and find that I like it more every day. However, it's not perfect.

This cookbook offers a good mixture of vegan recipes and nutrition basics that will be helpful to those new to the vegan lifestyle, especially parents that want to incorporate this type of eating into family meals. I have sampled several recipes that turned out very well, but not all of the recipes appeal to me. One recipe appears to be missing an ingredient. Accidents happen!

Why go vegan? The authors provide basics on environmental issues and ethics behind vegan choices, without being pushy. I like that and I think it will help non-vegans become more curious without being pushed away. I also appreciate the casual and friendly approach that is conveyed throughout the book. It felt comfortable.

The recipes are good, but not necessarily new or exciting. Many of the recipes are for home-style comfort foods that will appeal to families. These include recipes such as enchilada casserole, chili, French toast, and plenty of yummy desserts. If that's the type of food your family eats, and most probably do, this cookbook will help provide healthier alternatives to traditional recipes.

I love cookbooks with photos, but I'm sorry to say that the photos in this book disappointed me. The style seems outdated and I think it makes the food look bland. If I were flipping through this book in a bookstore, I would probably put it back on the shelf. The internet is filled with avid food bloggers that have mastered perfect food photography. I'm sure that not everyone will agree with me, but I'm a nut for good food photography and I felt this one was lacking. I'm sorry!

That said, the recipes that I tried turned out very well and were delicious. For my personal use, some of the better recipes in this book include smoothies, energy bars, granola, and Vietnamese banh mi. I tried several recipes, and will share my experiences with a few of them.

The first recipe that I tried was the Outrageous Granola. It included oats, nuts, dried fruit, and was flavored with vanilla, cinnamon, brown sugar, and maple syrup. It tasted as good as it sounds! It was easy to prepare and it turned out well. This was my first attempt making granola, and this recipe made it easy. My granddaughter also loved it, especially since she could help make it.

I also tried the Maple Mustard Greens. I'm always looking for a way to make me love kale, so I was anxious to try this. The dish also includes Swiss chard, which I love, and collard greens, which I have never tried. The recipe includes a full half cup of mustard, but it only serves 4 people. That's two full measuring tablespoons of mustard in one serving, which I admit worried me. I combined the mustard, maple syrup, and other seasonings and decided to lightly drizzle part of it over the cooked greens. I'm glad I did because a little really went a long way. It was really very delicious! The bonus was that I still had mustard sauce left over to use another night, which I gladly did.

The Chocolate, Fruit, and Nut Clusters were absolutely delicious and disappeared quickly. They are too dangerous to make again!

Page 170 includes a recipe for Olive Walnut Bread. The title sounds delicious, however the recipe left out the walnuts in the ingredient list and the directions. Plain olive bread sounded okay, but probably wouldn't be nearly as much fun for the taste buds.

I am enjoying exploring the recipes and I do like this cookbook better now than I did when it arrived, so I would recommend giving it a chance. There are honestly not a lot of recipes in this cookbook that I will try because my personal preferences are different, but the ones that I am enjoying are definitely keepers.

The book is well-organized and presents basic information on the vegan diet along with a good cross-section of recipes in a user friendly way to encourage exploration. I appreciated the non-technical approach geared to demystify and create a painless way to ease into what, for some people, could be a major change in eating habits. The group of recipes is broad and basic - not at all intimidating. It appears the authors' goal is for the book to provide a good starting point.

The problem is that the editing is sloppy, so the inexperienced cook may be less able to fill in the sometimes missing instructions or ingredients and may become discouraged, undermining investigation. Confusion and frustration may occur because ingredients are sometimes referred to by inconsistent names - called one thing and then another.

And, instructions sometimes ignore things mentioned in the ingredient list or include items not mentioned.
Example -- bread crumbs are noted as an optional item in the list of ingredients for the macaroni and cheese dish but the instructions ignore when/hot to use them. It may be obvious to an experienced cook (sprinkle them on top of the dish or toast them in butter (margarine) and then sprinkle them over the pasta and I assume, bake? But the baking information was also missing from the recipe. An inexperienced cook might mix the bread crumbs into the cheese sauce which won't render the best result. Bottom line is there is no reason to frustrate or confuse the user.

Additionally, some recipes don't seem to consider cost. Outrageous Granola calls for 1 cup of maple syrup. The organic maple syrup I buy is about eight dollars per cup, so including all the other ingredients in the recipe, making a batch of granola will be pricey.

And, although not a major point, but why waste space within the book for French Onion Dip that uses vegan mayonnaise and vegan sour cream as a substitute for regular sour c cream while still using the usual envelope of Lipton French Onion soup mix? Most people can probably figure out a simple exchange of ingredients without help.

I did prepare the Potato Hash and the recipe worked out fine although I thought it needed more seasonings, but that will always be subjective - different palates and preferences. I included some pepper, a little salt and a dash of hot sauce - and I don't care for vegan chorizo so I substituted a different vegan sausage product. The basic recipe was easy to adjust to suit individual tastes.

Regarding the functionality of the book, it would have been nice if more of the dishes were pictured but almost one third of the recipes are photographed. The majority of the recipes are printed in what appears to be very dark green ink, which is quite readable and font size appears to be 10 point, but the brown ink used for the ingredient list is a bit more of a challenge to read from standing position with the book laying on a counter top, particularly when the font size appears to be reduced to 9 point.

The book is a paperback so it does not lay perfectly flat without some effort, and the paper quality is not great - a splash of liquid, even wiped up quickly warped the page so using a cookbook holder would be a good idea to protect it while using it when cooking.

There is a lot to like about the idea for the book, but editing problems in cookbooks are a more serious matter than problems like misspellings in a novel. A cookbook is an instruction book and the recipes need to be clear and accurate so the user does not potentially waste time and money. And, in this case it is particularly important when trying to encourage people to make a somewhat radical change of diet. If interested in the book it might be worth taking a look at it in a library or bookstore before purchase.
